4 eggs
1 cup flour
1/2 cup milk
1/2 cup water
1/2 teaspoon salt
2 tablespoons melted butter
1 apple, peeled cored and grated

For the flambe part...

Copious amounts of apple brandy
1/2 cup "sugar in the raw" (granulated raw sugar) regular white sugar works fine.

Mix well... all ingredients except the brandy and sugar ...100 strokes. Let sit for at least 1 hour.

Cook the crepes in a flat frying pan or crepe pan, light brown on both sides. When all the crepes are cooked and staked on a plate, you are ready to begin!! Put one crepe back in the frying pan, sprinkle 1 teaspoon of the sugar evenly over the crepe then pour a dash of brandy over the sugar and light with a match. The brandy will burn with a beautiful blue flame and caramelize the sugar. When the flame goes out, role up the crepe, cut...

3 medium to large apples
¾ cup of fresh or dried cranberries
½ cup of chopped walnuts (pecans can be substituted)
pinch cinnamon
1 tablespoon tapioca
juice of a ¼ lemon
¾ cup of honey
3 tablespoons unsalted butter
2 eggs (beaten)
2 tablespoons maple sugar

Preheat oven to 375. Line the bottom of the pie plate with piecrust. Cut up apples into fairly small pieces and place in a large bowl. Fold in cranberries, nuts, cinnamon, tapioca, lemon juice, and 3 tablespoons of the honey. Melt butter in a saucepan over very low heat and add the remaining honey and stir. Remove saucepan from heat and add 2 beaten eggs. Stir this mixture by hand and than fold into the other ingredients. Place into the piecrust and sprinkle the top with the maple sugar. Bake for 45-50 min.

4 boneless, skin-on chicken breasts
Salt and ground black pepper
3 tablespoons grape seed oil
1 apple, sliced
1/3 cup apple cider vinegar
1/3 cup maple syrup
1 bay leaf
1/2 cup chicken stock or Apple Cider
2 tablespoon unsalted butter

Preheat oven to 400º. Season the chicken breasts with salt and pepper. Heat a large oven proof sauté pan over medium high heat and add oil. When hot add chicken breasts skin side down. Brown the chicken on both sides and add the apples. Add vinegar, maple syrup, bay leaf, and stock to the sauté pan. Bring to a boil. Place pan in oven and roast until the internal temperature of the chicken reaches 165°F, approximately 6-10 minutes. Remove chicken from the oven. If needed reduce sauce 3 minutes to thicken over high heat. Turn heat off, add butter and adjust the seasoning. Serve chicken with thicke...

¾ Cup Vegetable Oil
1 Cup Brown Sugar, firmly packed
2 Tablespoons Boiled Cider
2 Large Eggs
1 ½ Teaspoons Ground Cinnamon
¼ Teaspoon Ground Ginger
1/8 Teaspoon Ground Cloves
½ Teaspoon Salt
1 Teaspoon Baking Soda
1 ½ Cup King Arthur Unbleached All Purpose Flour
1 Large Apple, peeled and finely chopped

Directions

Preheat the oven to 350 degrees. Lightly grease a 9 inch round cake pan at least 2 inches deep. Line bottom with parchment, and grease the parchment.

2 Apples cored and chopped
3/4 Cup each Currants and chopped onion
1/2 Cup chopped bell pepper and snipped dates
2 cloves garlic, finely chopped
1 Cup honey
3/4 Cup cider vinegar
1/2 teaspoon ground cinnamon

In medium skillet combine apple, currants, onion, bell peppers, dates and garlic. In a bowl combine honey, vinegar and cinnamon. Pour into skillet and mix well. Bring to a boil, decrease heat to a med simmer and cook about 40 minutes stirring occasionally. Cool and refrigerate. Makes about 2 1/2 cups.
