The long, silvery fish, also known as Pacific saury, are available in Japanese supermarkets year-round, but autumn is the time to get them fresh rather than previously frozen.
Cookbook author and Japan News food columnist Tamako Sakamoto will share an easy recipe for salt-grilled sanma in her next Taste of Home column.

I love Japanese food.
And so does Matthew Amster-Burton, who wrote “Pretty Good Number One: An American Family Eats Tokyo.”
It’s a food memoir about an entire month the author and his family spent living and eating in Tokyo.
It also includes a couple of out-of-town excursions, such as a visit to Utsunomiya to try the city’s famous gyoza dumplings.
His favorite place for hiyashi chuka, a cold noodle dish, is in Nihonbashi, Tokyo, not too far from The Japan News office. So, I decided to check it out.

Mt. Ishizuchi, in Ehime Prefecture on the island of Shikoku, is 1,982 meters tall.
A Yomiuri Shimbun reporter recently climbed the mountain on a journey that he hoped would teach him something about himself.
Along the way, he had the harrowing experience of hauling himself up a steep cliff by grasping these heavy chains.

What was Japan like before there were people?
According to an exhibition called “Prehistoric Mammals” at the National Museum of Nature and Science in Tokyo, tiny mammals scurried underfoot here during the age of the dinosaurs.
After the dinosaurs became extinct, mammals began growing larger. At one point, Japan was home to eight different species of elephant.
And if old bones are not your thing, the exhibition also has a snaggle-toothed mascot named Paleo-kun.

When students hunt for jobs around the time of their university graduation, the process is called shukatsu. For many, it is a gruelling struggle.
Cookbook author Tamako Sakamoto supported her eldest son in his shukatsu efforts by preparing kushikatsu, or fried pork on skewers. Kushikatsu is great with a glass of cold beer.

The 88-temple pilgrimage in Shikoku is a long trip. Many of those who go on the famous walk need to take an even longer trip just to begin.
The 1,400-kilometer route is said to have been established in the year 815 by the Buddhist monk Kobo Daishi, also known as Kukai.
Japanese pilgrims have trod the path for over 1,000 years. Now, a growing number of the white-clad pilgrims arriving at the 88 temples are foreigners.

When a Yomiuri Shimbun reporter caught the sweet and sour smell of black vinegar coming in through his car windows, he knew that he would soon arrive at his destination in the Fukuyama district of Kirishima, Kagoshima Prefecture.
Made only with rice, koji rice malt, and local groundwater, kurozu black vinegar is aged for just over a year in 50-liter earthen jars. The vinegar's fermentation is powered by the warmth of the sun, and the outdoor production areas are called tsubobatake, or fields of jars.

Everybody loves puppies and kittens. But these days, some connoisseurs of cute are turning their attention to parakeets.
Parakeet aficionado may now flock to shops in Tokyo that sell parakeet bags, parakeet mugs, parakeet notebooks... and even parakeet ice cream.
But fear not for your feathered friends. The ice cream is flavored with birdseed and fruit. There are no actual parakeets in it.

What would happen if you took a ton of hatahata sandfish and buried them in salt?
In Akita Prefecture in northern Japan, the fish are salted on the day they are caught. Then, they are allowed to ferment for a year or two.
The result is a pungent fish sauce called shottsuru, which adds flavor to dishes such as nabe stews.
As for that ton of fish, it would give you just 500 liters of the sauce.
