- MAMALIGA ROMANIAN CORNMEAL POLENTA WITH SHALLOTS, SPINACH AND FETA CHEESE
6 large shallots, diced
½ stick plus 2 tablespoons salted butter
10 ounces fresh spinach
1 teaspoon salt
3 ½ cups coarse yellow cornmeal
1 cup feta cheese broken up into small pieces
1 cup ricotta cheese
1 cup sour cream or yogurt
Saute the shallots in 2 tablespoons of the butter. Add the spinach little by little on top and saute until withered but still bright green. Set aside.
Pour the 5 cups of water into a heavy saucepan and bring to a rapid boil.
Add salt and then sprinkle on the cornmeal very slowly, stirring constantly with a long wooden spoon. Then reduce the heat to medium and continue stirring until the cornmeal is very thick and firm, about 15 minutes.

The Perfect Passover Cake
Serves 8
3/4 cup roughly chopped roasted, unsalted almonds
1/3 cup packed light brown sugar
1½ teaspoons ground cinnamon
2/3 cup semisweet chocolate chips
1 1/2 cups almond flour
2 tablespoons potato starch
½ teaspoon baking powder
¼ teaspoon kosher salt
3 large eggs, at room temperature
1/2 cup sugar
1/3 cup vegetable oil
1 teaspoon vanilla extract
3 medium Bosc pears, peeled, quartered and cut into ½-inch pieces
1. Preheat oven to 375 degrees and line a 9-inch round springform cake pan with parchment paper; set aside.

Preheat the oven to 375 degrees
Mix the cake meal, the baking soda, and the salt.
Beat the butter, the granulated sugar and the brown sugar, and the vanilla extract in a mixing bowl (or stand mixer?) until creamy.
Add the eggs, one at a time, beating well after each addition. Gradually beat in the cake meal mixture, and then stir in the chocolate. I like to add really good high quality chocolate so I might just break it up or use chips.
Drop by rounded tablespoons onto parchment paper-lined cookie sheet.
Bake for 9 to 11 minutes or until brown. Cool on the baking sheets for 2 minutes.

- Recipe:
5 navel oranges (about 3 pounds)
4 cups sugar
1 cup orange liqueur, plus more as needed
Large pinch saffron (optional)
Wash the oranges and slice off the ends. Cut them vertically (through the poles) into quarters, then thinly slice crosswise. Put in a non-reactive bowl and mix gently with the sugar, orange liqueur and saffron, if using. Cover and let macerate for a few hours or up to overnight.
Simmer, covered, for 45 minutes to an hour, or until thick and jammy. Let cool for a few hours or overnight, then reheat and cook a little more if it hasn’t thickened (or dilute with water or more orange liqueur if too thick).
Yield: 4 ½ to 5 cups

Escabeche, another way of preparing fish—first marinating it in vinegar, and then frying it—is a distinctly Jewish notion that preceded ceviche.
