All are growing and underfunded needs throughout the state.

The Hat, the pastrami dip sandwich shop that finally opened in Las Vegas after a seven-year wait, has cut the line. Literally.
“Due to high demand and long wait times, we will stop accepting guests in-line and drive thru at 12:00 a.m.,” the restaurant announced in a recent Instagram post. “We apologize for the inconvenience and appreciate your patience and support.”
The Hat, 6215 S. Rainbow Blvd., lists its hours on its website as 10 a.m. to 1 a.m. Mondays through Saturdays. The Vegas store is the first location for The Hat outside its native Southern California. In 2019, plans for a Vegas outpost first emerged. That project, at the same South Rainbow site, never came to fruition. In June 2025, Neon broke the news the restaurant was officially coming to town, following the filing of Clark County building permits and confirmation by the company. The restaurant’s website on Monday displayed a bold statement that pointed at high prices in Las Vegas casinos, “corporate greed,” exclusion of the middle class and the restaurant being considered “gauche.”
“Our core value, ‘eat big and laugh loud,’ no longer fits a city peddling forty-dollar ‘artisanal avocado toast.’ The honest, heavy-duty calories that built our reputation are now considered gauche by a city that has excluded the middle class and lost its swagger in the process,” the statement read in part.
