- Sir James Martin was born in Crossgar, County Down in 1893. He was a brilliant engineer in his teenage years, creating everything from a three-wheeled car to a fish fryer. In 1934 he founded the Martin-Baker Aircraft Company with his friend Captain Valentine Baker, a flight instructor who had served in World War One. With Captain Baker as his test pilot, they began working on aircraft for the Royal Air Force during World War Two.
Sadly Captain Baker died in a crash while testing one of the planes and it had a big impact on James. He now focussed his efforts on improving pilot safety. Due to the number of accidents during World War Two, he was approached by the Ministry of Defence for help.
In 1944, Martin went on to develop the ejector-seat and by 1949 the ejector seats were being fitted in all British Military jet aircraft. To date, this invention has saved over 7,500 lives.

- Brendan (Barney) Hughes was born in Armagh in 1808. Starting out as a baker’s boy, he moved to Belfast at the age of 19 to continue baking. By 1833, Barney was the manager of the Belfast Public Bakery, which was set up in order to prevent private bakers from overcharging the public.
Bread was an ideal meal, as it was easy to store, kept well and was very filling. During the Great Famine, Barney created a standardised bread bap which he sold at a reasonable price, this bap became known as the Belfast bap.

- Born in Cookstown, Co. Tyrone, Mary Mallon emigrated to New York where she was employed as a domestic assistant.
However, Mary had a great talent for cooking and ended up working as a cook for many affluent families in the New York area.
But a strange pattern started to occur. Anywhere that Mary worked, family members in the household started to develop typhoid fever.
Mary was unaware that she was carrying the bacterial infection and in 1907 she was the first person in the United States to be identified as an asymptomatic carrier (showing no symptoms) of the bacteria associated with typhoid disease.

- Sir Samuel McCaughey was born in 1835 in Tullynewey, near Ballymena, Co. Antrim. He emigrated to Australia to work as a jackaroo (a sheep farm labourer) on his uncle’s sheep farm.
Samuel was no stranger to working with the times – he was one of the first to adopt irrigation, meaning his livestock had better access to water. In 1888, the world’s first ever mechanised shearing of sheep took place in Dunlop, one of his sheep stations.
Making these improvements brought Samuel a lot of success and wealth. He became one of the richest men in the state of Victoria and was given the nickname “the Sheep King”.
