Description: The City and County of Honolulu selected a site on private land in Wahiawā for a landfill to replace the current Waimānalo Gulch Sanitary Landfill in West Oʻahu, which is scheduled to close in a few years. Critics don’t like the Wahiawā selection for numerous reasons including that it sits over an aquifer, or underground water supply. The city is lobbying the state to amend a law that limits where it can put a landfill.

Description: In this episode, we feature one of Hawaiʻi’s most beloved desserts, butter mochi. This baked good made of sweet rice flour and coconut milk has become a favorite among island families like Jodi and her daughter, Jenna, who bring their personal touch to the dessert. With its chewy texture and crispy top, butter mochi remains a cherished and comforting dish in their family.

JODI ENDO CHAI'S RECIPE FOR BUTTER MOCHI:
1 box of mochiko flour (16 oz.)
3 tsp. baking powder
3 c. sugar (little less)
1 stick (1/2 c.) butter, melted
1 tsp. vanilla
5 eggs
2 c. milk
1 can coconut milk

9x13 pan; Bake at 350 degrees for 1 hour 15 minutes

Lilikoi & Guava Glaze:
3/4 c. powdered sugar
1 1/2 tbsp. lilikoi / guava purée
