- Join Gideon on the second edition of Gid’s Grandparent’s Gourmet, as he makes his Grandma’s “Baked Pineapple.” The full recipe for this dish is as follows:
2 cans chunk pineapple, drained 1 c. shredded cheddar cheese
3 tbl. flour
1/2 c brown or white sugar
1 stack ritz crackers, crushed 1 stick butter melted
Mix cheese, flour and sugar in a bowl big enough to hold the drained pineapple. Add the pineapple and coat with the dry ingredients, then place in the baking dish. Break up the crackers and sprinkle crackers on top of the pineapple, then drizzle butter over all. (Place the crackers and butter on the top right before baking, do not add them ahead of time, they will get soggy!)
Bake at 350 degrees until bubbly about 20-30 minutes.
I usually mix flour, brown sugar and cheese together first and then mix in pineapple. I also use the large cans of pineapple.

The ingredients for this recipe are as follows:
2 Cups All-Purpose Flour
2 Cups Granulated Sugar
3/4 Cup Cocoa Powder
2 tsp. Baking Powder
1.5 tsp. Baking Soda
1/2 tsp. Salt
1 Cup Buttermilk
1/2 Cup Vegetable Oil
3 Large Egg
2 tsp. Vanilla Extract
1 Cup Boiling Water
3 Sticks Unsalted Butter
1 Cocoa Powder
5 Cups Confectioners Sugar
1/2 Cup Whole Milk
and 1 tsp. Vanilla Extract

- On February 18th, the CSU women's basketball team (17-9, 9-5) sought vengeance against the Air Force Falcons (12-14, 7-7). Three weeks ago, Air Force soared high courtesy of a clutch go-ahead triple by Madison Smith late in the final minute of play. Fast forward to last Saturday, and the Rams had a chance for redemption on their home floor. And for pretty much the entire game, Colorado State controlled the pace. Other than an 11-11 tie with 1:56 remaining in the first quarter, the Rams never slipped their advantage, even extending it to 17 in the fourth quarter. However, the Falcons went on an improbable 22-7 run late to cut the lead to just two with 25 seconds remaining. After Air Force and CSU traded a bucket and a few free throws, the Falcons had one last shot down three but, in the end, the Rams survived 67-64. CSU travels to face Wyoming tomorrow night, while Air Force rides a four-game losing streak back home against Nevada. All of this and more from CTV Sports!
