Corn Salsa recipe:
3 teaspoons extra-virgin olive oil
Maldon sea salt
2 cups fresh corn kernels (from 3-4 ears)
1 small Serrano or Jalapeño pepper, seeded and chopped (leave seeds in for extra heat)
2 tablespoons chopped fresh cilantro
2 tablespoons chopped red onion
2 tablespoons fresh lime juice
Preheat a grill to medium high. Brush the corn with a little olive oil and grill until charred in spots, about 5 minutes. Cool slightly and remove kernels from the cobs.*
Mix the corn, serrano, cilantro and red onion in a bowl. Stir in the remaining teaspoons olive oil, the lime juice, and 1/2 teaspoon salt. Add more salt and l...
